It started as a popular street food in Thailand, now it's a phenomenon in the United States. You can bring it to your ice cream shop with this simple recipe!
How to Make Rolled Ice Cream
What You'll Need:
- 2 Ice Cream scrapers
- Metal cookie sheet with edges (for home use) or
- Anti-Griddle (for business use)
- 2 Cups of ice cream base
- Mix-ins (your choice of toppings to mix into your treat)
- Mini tongs
- 12 oz Ice cream cup
1. Prepare Your Supplies
The most important part of rolled ice cream is quick freezing. This means you'll need to freeze your cookie sheet overnight or longer. You'll also need to chill your ice cream base in the fridge overnight. With a cold base and tray, your ice cream will freeze more easily and be more simple to work with.
2. Start Chopping!
Take your cookie sheet out of the freezer and start making your ice cream right away. Start by adding your toppings to the center of your tray and chop them into small pieces with your scrapers. After you've chopped them into manageable bits, pour your ice cream base directly over your toppings.
3. Mix It Up
Once you've chopped your ingredients and added your ice cream base, begin to mix your base and toppings by repeatedly scraping them toward the middle of your tray. Continue chopping and mixing until your ice cream is no longer liquid and your toppings are distributed evenly.
4. Spread it Out
After you've mixed your ice cream, you'll need to spread it into a rectangle on your tray. Make sure it's the same thickness everywhere on the tray. Don't spread it all the way to the rim, it'll be much easier to scrape if it's farther from the edges.
5. Roll it Up
Use one scraper to roll the ice cream into tube shapes. You'll do this by holding your scraper at a 45 degree angle with the blade against your tray. After you've rolled everything on your tray, use your tongs to place each roll in your ice cream cup. Top it with whipped cream and enjoy!
