How to Make Sugar-Free Keto Ice Cream
Keto and low-carb diets have become more common in the last few years. Even people avoiding sugar and carbs can still enjoy your ice cream! Here's a great recipe for sugar-free keto ice cream.
How to Make Sugar-Free Keto Ice Cream
What You'll Need:
- 3 tablespoons butter
- 4 cups heavy cream
- 1/3 cup powdered allulose (or your favorite sugar substitute)
- 1 teaspoon vanilla extract
- 1 medium vanilla bean
- Cups to serve it in
1.Ā Mix your Ingredients
Melt the butter in a medium saucepan. Stir and swirl it enough that it doesn't separate or brown. Add 2 cups of heavy cream and your powdered sweetener. Whisk together and bring to a boil.
2. Simmer
Reduce to a simmer and stir occasionally. Simmer this mixture until it coats the back of a spoon, it should take about 30-40 minutes.
3. Cool
Once you've reduced your mixture, remove it from the heat. Allow it to cool to room temperature. Once cool, add your vanilla extract and vanilla bean (remember to scrape the seeds into the bowl and then add the full bean).
4. Finish Mixing and Chill
Add your remaining heavy cream and mix thoroughly. Chill your final mixture in the fridge for four hours.
5. Churn it
Add your ice cream mixture to your ice cream machine. Churn until it's the consistency of soft serve.
6. Enjoy!
You can enjoy it right out of the machine or freeze it in an air-tight container. Because of its fat content, this ice cream will freeze soft enough to scoop!
